Chocolate Chip Loaf

More chocolate gloriousness for Bunco prizes. The only bad part is I didn’t get to eat any of it.

2 cups flour

1/2 teaspoon baking soda

1/2 teaspoon baking powder

1/2 teaspoon salt

6 tablespoons butter, softened or 4 1/2 tablespoons of oil

2/3 cup sugar

3 eggs

1 teaspoon vanilla

1 cup buttermilk

1/2 – 1 cup chocolate chips

1 Preheat oven to 350. Spray loaf pan with cooking spray for baking.

2 Whisk together flour, baking soda, baking powder, and salt in a medium bowl.

3 In a mixer bowl, beat butter and sugar until light and fluffy. Add eggs, one at a time, mixing well after each. Add in vanilla and mix.

4 Add half the dry ingredients and beat just until combined then add in half the buttermilk and beat just until combined then repeat with remaining dry mixture and buttermilk. Stir in chocolate chips by hand.

5 Pour batter into prepared pan. Bake 45 – 50 minutes or until a toothpick inserted in center comes out clean. Let cool in pan 15 minutes before removing to cool completely.

Double Chocolate Loaf

I hosted Bunco at my house last night and I made this to go along with one of the prizes. I’m not gonna lie, I wanted to keep it all for me!!

3/4 cup brown sugar

1 cup cocoa powder

1 1/2 cups flour

3/4 cup sugar

1 1/2 teaspoons baking soda

3/4 teaspoon baking powder

1 teaspoon salt

2 eggs

1 egg yolk

3/4 cup buttermilk

1/2 cup oil

1 teaspoon vanilla

1 teaspoon espresso powder (I left this out this time)

8 ounces chocolate chips

1 Preheat oven to 350. Spray loaf pan with cooking spray for baking.

2 Add brown sugar, flour, sugar, baking soda, baking powder, and salt to your mixer bowl and turn mixer on briefly to combine.

3 In another bowl, whisk together egg and egg yolk then add buttermilk, oil, and vanilla and whisk to combine.

4 Turn mixer on low and pour egg mixture into bowl slowly, mixing just until combined.

5 Stir in chocolate chips by hand and pour into prepared pan. Bake for 1 hour or until toothpick inserted in center comes out clean. Let cool in pan 15 minutes before removing to cool completely.

7 Can Soup

You are looking at the easiest dinner ever right there and pretty tasty too. You might even have all the ingredients on hand like I did.

1 can chili

1 (15 oz) can kidney beans

1 (15 oz) can pinto beans

1 (15 oz) can black beans

1 (15 oz) can diced tomatoes

1 (15 oz) can corn

1 (10 oz) can Rotel (I didn’t have Rotel so I subbed in another can of diced tomatoes and a small can of diced green chilies so I guess you could say that my soup was 8 can soup)

salt and pepper

shredded cheese if desired

1 Without draining any of the cans, empty all cans into a large pot and heat to high. Bring to a boil then reduce heat and simmer for 10 – 15 minutes. Add salt and pepper.

2 Top with shredded cheese and serve.

Chocolate Easter Bunny Nest Treats

Made some Easter treats for the neighbors. Came out pretty cute I think!

I found this fun little Celebrate It Easter Nest mold at Michaels (see below) and

decided to get creative.

I made some chocolate cake batter (from a box), spooned the batter into the molds and baked as directed. It made 24 nests.

Next I whipped up a batch of my favorite buttercream icing (recipe here), tinted it green and piped it into the nests with a 1M tip.

Then I sprinkled the frosting with this Hop – A – Long Mix that I found at Sam’s Club.

And finished them off with a chocolate Ghiradelli bunny! (I found those at Target.)

I also made some little bunny butt candies.

My daughter found this mold at Dollar Tree. I melted some Wilton Pink Candy Melts according to the package directions then filled the molds and placed in the fridge to set. When they came out, I dipped a white chocolate chip in the melted candy melts and attached it to the bum!

White Chocolate Cinnamon Toast Crunch Bars

These are a fun and easy little treat. The kids I made them for both told me that Cinnamon Toast Crunch was their favorite cereal.

3 1/4 cups white chocolate chips or candy melts

2 teaspoons cinnamon

1 cup Cinnamon Toast Crunch Cereal

1 Melt white chocolate chips or candy melts in microwave at 30 second intervals, stirring in between, until melted and smooth.

2 Add cinnamon and stir to combine.

3 In a 12 well silicone snack bar pan (I have a Pampered Chef one), place 3 – 6 pieces of cereal into each well. Spoon chocolate over cereal then immediately place 3 – 6 more cereal pieces on top of the chocolate. Sprinkle with additional white chocolate chips.

4 Let set before removing from pan.

Light and Crisp Sourdough Waffles

These are the best! I’ve made them twice already. They truly are light and crispy which is just how I like my waffles. And, bonus, they are super easy to make.

1 cup flour

1/2 teaspoon baking soda

1/2 teaspoon salt

2 tablespoons sugar

1 cup sourdough starter

3/4 cup milk

3 tablespoons butter, melted

2 eggs

2 teaspoons vanilla

1 Preheat waffle iron as per waffle iron instructions.

2 Whisk together flour, baking soda, salt, and sugar.

3 In another bowl, whisk together starter, milk, butter, eggs, and vanilla.

4 Add wet ingredients to dry and stir just until combined.

5 Spray waffle iron lightly with cooking spray and cook as per your waffle iron instructions.

Sourdough Cinnamon Pecan Muffins

Another delicious recipe using some sourdough discard.

1 1/2 cups flour

1 teaspoon baking powder

1/4 teaspoon baking soda

2 teaspoons cinnamon

1/2 teaspoon nutmeg

1/4 teaspoon salt

4 tablespoons butter, melted

1/2 cup brown sugar

1/2 cup sugar

1 teaspoon vanilla

1/4 cup milk

1 egg

1 cup sourdough starter

1 cup chopped pecans

Turbinado sugar for topping, if desired (you can find this at Trader Joe’s)

1 Heat oven to 400. Line muffin tins with paper liners.

2 Whisk together flour, baking powder, baking soda, cinnamon, nutmeg, and salt in a large bowl. Add butter, sugars, vanilla, milk, and egg. Stir until combined. Add sourdough starter and mix just until combined. Fold in pecans.

3 Scoop batter into prepared pan. Sprinkle with Turbinado sugar. Bake for 17 – 20 minutes.

White Chocolate Lemon Bread

This. Was. Amazing! I want to make more right now but if I do, I’ll eat it all. Bonus, it was super easy to make. (If you look closely, you can tell that I baked this in my Nordic Ware Lemon Loaf Pan.)

BREAD

1 box lemon cake mix

2 small boxes white chocolate instant pudding mix

1/4 cup oil

4 eggs

1/3 cup fresh squeezed lemon juice

zest of one lemon

1 cup sour cream

GLAZE

1 1/2 – 2 cups powdered sugar

zest and juice of 1 – 2 lemons

1 For the bread, heat oven to 350. Spray loaf pan with cooking spray for baking.

2 Beat cake mix, pudding mixes, oil, and eggs until well combined. Add lemon juice, lemon zest, and sour cream and beat just until combined.

3 Pour batter into prepared pan and bake for 45 minutes or until toothpick inserted in center comes out clean. Let cool in pan for 10 -15 minutes before removing from pan to cool completely.

4 For the glaze, whisk together glaze ingredients until well combined then drizzle over bread.

YIELD: the recipe said 1 regular size loaf but I had enough batter for 1 regular size loaf and 1 mini loaf

Cinnamon Roll Cake (from a cake mix)

My neighbor Chelsea gave me this beautiful loaf pan for Christmas

so when her birthday rolled around I decided to make her a cake in this pan and it turned out so pretty, don’t you think?

CAKE

1 box yellow cake mix

1 small box instant vanilla pudding mix

4 eggs

3/4 cup milk

3/4 cup water

1 tablespoon vanilla

CINNAMON SWIRL

1/3 cup sugar

1 tablespoon cinnamon

1 Heat oven to 350. Spray loaf pan or pans (see yield not below) with cooking spray for baking.

2 Whisk together cake mix and pudding mix. Add eggs, milk, water, and vanilla and mix until smooth.

3 In a small bowl, whisk together sugar and cinnamon.

4 Spread half the batter into prepared pan and top with cinnamon sugar mixture then spread remaining batter over top of cinnamon sugar layer. Swirl everything together with a knife. (You can do more layers if you like, I just went with one.)

5 Bake for 45 – 55 minutes or until toothpick inserted in center comes out clean. Allow to cool in pan for 15 – 20 minutes before removing to rack to cool completely.

Yield: the recipe said it would make one loaf cake but I had enough batter to make 1 large loaf cake and 1 small loaf

Chocolate Dipped Valentine Treats

I know I’m late but these are too cute not to post! I made them for the neighbors for Valentine’s Day and they were all really easy to do.

1 – 2 bags Wilton candy Melts

1 package Oreos

1 package Oreo Thins

1 tin Pirouette cookies

1 bag small twist pretzels

Valentine sprinkles

1 Melt candy melts according to package directions.

2 Line a cookie sheet with parchment paper. Dip an Oreo/an Oreo Thin/a Pirouette cookie into the melted candy melts and gently shake to remove excess. Set on parchment paper and immediately shake Valentine sprinkles over them. Allow chocolate to set before handling.

3 For the pretzels (my fav), set a pretzel on the parchment paper and with a small spoon, fill the pretzel with melted candy melts, spreading with back of spoon. Top with a large heart sprinkle.
