Baked Waffle Sticks

If you follow my blog then you know that I have a love affair with waffles!  We tried this stick version which you can eat with your fingers, woo hoo and they were delicious!  I even made a few substitutions to take down the calorie count and no one noticed.  I made them in my new Pampered Chef pan, see below.

Pampered Chef Waffle Stick Pan

 

3/4 cup flour

3 tablespoons sugar

1 tablespoon baking powder

1/4 teaspoon salt

1/2 cup milk (I used Almond Milk)

3 tablespoons oil (I used Greek Yogurt)

2 eggs (I used 1/2 cup applesauce)

1 teaspoon vanilla

1  Preheat oven to 400.  Spray waffle pan with cooking spray.

2  Whisk together flour, sugar, baking powder and salt in medium bowl.

3  In another bowl, combine milk, oil, eggs and vanilla.  Add wet ingredients to dry and stir just until combined.

4  Distribute batter evenly among wells in pan.  Bake 11 – 13 minutes or until golden brown.  Let sit 5 minutes before removing.

One last Halloween treat idea for you, campers!  Who doesn’t love a donut hole, especially when it’s dipped in chocolate!

1 package Wilton White Candy Melts

1 package plain donut holes

1 package Life Saver Gummies

small handful of mini chocolate chips

1  Melt candy melts according to package directions.

2  Dip donut holes in melted candy melts and set on wax or parchment paper.

3  Press a Life Saver Gummies on the top of the donut hole then place a mini chocolate chip into the Life Saver hole.

4  Allow chocolate to set.

It doesn’t get much easier than this and everyone will be so impressed with you!

1 bag Wilton Orange Candy Melts

Halloween sprinkles

1 package Oreos

lollipop sticks

candy eyes

1  Melt candy melts according to package directions.  Pour sprinkles into a shallow bowl.

2  Carefully press a lollipop stick into each Oreo.  Dip into melted candy melts until covered, lift out and let excess candy melts drip back into bowl.

3  Press top of coated Oreo into sprinkles for hair.

4  Place coated Oreo on a piece of wax or parchment paper and place eyeball just under hairline.

5  Allow candy melts to set before removing from paper.

And yet another oh so easy Halloween treat to throw together at the last minute!

1 (10.5 oz) bag of snack size Reese’s Peanut Butter Cups, about 14 cups

7 Oreos

28 mini candy eyes

1  Unwrap all the peanut butter cups.

2  Separate each Oreo and carefully scrape the cream filling onto a plate then carefully break each Oreo in half.

3  Using the Oreo cream filling as “glue”, put a small dab on one end of each half of the cookie and attach carefully to peanut butter cup.

4  Carefully press two candy eyes onto the peanut butter cup under the wings.

Cute right?  And oh so easy!

1 bag Wilton Green Candy Melts

1 box (12 count) Swiss Rolls

1 container Halloween colored sprinkles

24 candy corns

24 candy eyes

12 white sprinkles

1 Melt candy melts according to package directions in microwave safe bowl.

2  Unwrap Swiss Rolls.  Pour Halloween sprinkles into a shallow bowl.  Dip the top of one Swiss Roll into the green candy melts to cover about 1/3 of the roll then dip the top into the sprinkles for hair.

3  Push two candy corns into the side of his head for bolts.  Place two candy eyes near the top and one white sprinkle under the eyes for his mouth.

4  Place on wax or parchment paper until candy melt is set.

I’ve got some quick, easy and fun Halloween treat ideas coming at you this week leading up to Halloween.  Here is the first!

1 bag of Wilton Green Candy Melts

1 bag of pretzel rods

handful of almond slices

1  Melt candy melts according to package directions in microwave safe bowl.

2  Dip pretzel rods into melted candy melts and, using a spoon, “paint” the pretzel rod as much as you like.

3  Place on a parchment paper or wax paper covered tray and place one slice almond near the coated end of the pretzel rod for a fingernail.

4  Let sit until candy melts are set.

Super easy and quick way to make fajitas, also really yummy!

1 – 2 tablespoons olive oil

1 onion, sliced into strips

1 red pepper, sliced into strips

1 orange pepper, sliced into strips

1 yellow pepper, sliced into strips

1 envelope fajita seasoning

1/2 cup water

1 1/2 pounds frozen precooked chicken breast strips

tortillas, shredded cheese, shredded lettuce, sliced tomatoes, salsa, sour cream, guacamole, whatever else you like to eat with fajitas

1  In a large skillet, over medium – medium high heat, add the olive oil until warm.  Add in onions and peppers and cook until onions are translucent, 4 – 5 minutes.  Remove onions and peppers from skillet and set aside.

2  Add chicken strips, 1/2 cup water and envelope of fajita seasoning and cook until chicken is heated through, about 5 minutes.

3  Add onions and peppers back to skillet and cook until warmed through.

4  Serve in tortillas with desired toppings.

Another tasty breakfast or snack idea for under 100 calories, around 88 in fact.

1 cup whole wheat flour

1/2 cup cocoa

1/2 teaspoon baking soda

1 1/2 teaspoons baking powder

1/2 teaspoon salt

2 eggs

1/4 cup sugar

1/4 cup brown sugar

1 teaspoon vanilla

1/2 cup plain Greek yogurt

1/4 cup unsweetened applesauce

1 cup zucchini, ground or shredded

1/4 cup chocolate chips

1  Preheat oven to 350.  Lightly spray donut pans with cooking spray.

2  Whisk together flour, cocoa, baking soda, baking powder and salt in a medium bowl.

3  In large bowl, lightly beat eggs then add sugars, yogurt, applesauce, vanilla and zucchini and mix well.

4  Mix dry ingredients into wet ingredients until well combined.

5  Pour batter into gallon size Ziploc bag, snip one corner off and pipe into donut pans.  Top with chocolate chips.

6  Bake 9 – 11 minutes or until toothpick inserted near center comes out clean.  Remove from oven and allow to cool.

7  You can make a glaze for them if you like by mixing together 1/4 cup powdered sugar with a couple tablespoons of milk and a 1/2 teaspoon of vanilla then just drizzle over.  The glaze adds about 10 calories to each donut.

Yield:  I got about 12 regular size donuts and about 9 smaller donuts from this recipe so that makes the calorie count per donut even less!

They taste so much better than their name suggests!

1/2 cup whole wheat flour

pinch of salt

1 heaping teaspoon baking powder

1 tablespoon unsweetened applesauce

1/2 cup unsweetened almond milk

2 egg whites or 4 tablespoons egg white substitute

1  Whisk together dry ingredients.

2  Whisk together wet ingredients.

3  Add wet to dry and mix well.

4  Cook in waffle iron as per waffle iron instructions.

Serve with low calorie syrup, light Cool Whip and/or strawberries

Yield:  6 waffles, 45 calories each

Behold my new favorite cheat!  At only 100 calories, they are a perfectly delicious way to quiet that sweet tooth!

1 cup flour

1/2 cup brown sugar

1/3 cup cocoa powder

3/4 teaspoon baking soda

1/2 teaspoon salt

1/4 cup cooled coffee

1/2 cup water

1/2 cup unsweetened applesauce

1 teaspoon apple cider vinegar

2 teaspoon melted butter

1 teaspoon vanilla

1/4 cup chocolate chips

1  Preheat oven to 350.  Line a muffin pan with paper liners.

2  Mix together flour, brown sugar, cocoa, baking soda, and salt in medium bowl.

3  Mix together coffee, water, applesauce, vinegar, melted butter, and vanilla in a small bowl.

4  Add wet ingredients to dry and stir just until combined.

5  Scoop batter into prepared pan and top with chocolate chips.

6  Bake for 15 – 20 minutes or until top springs back when gently touched.
