I saw this recipe and was totally skeptical so had to give it a try. It truly is amazing that these brownies only have 3 ingredients. They are awesome!
1 1/4 cups Nutella
2 eggs
1/2 cup flour
1 Preheat oven to 350.
2 Stir together ingredients until smooth. Spread into 8 x 8″ baking dish. (DO NOT GREASE PAN!)
And the zucchini keeps on coming . . . (These were delicious by the way.)
1 1/3 cups flour
2/3 cup packed brown sugar
1/3 cup unsweetened baking cocoa
3/4 teaspoon baking soda
1/2 teaspoon salt
3/4 cup buttermilk
1/3 cup butter, melted
1 egg
1 teaspoon vanilla
1 cup coarsely shredded zucchini
1/2 cup semisweet chocolate chips
1/4 cup chopped walnuts
1 Heat oven to 375. Line muffin tin with paper liners.
2 Whisk together flour, sugar, cocoa, baking soda, and salt in a large bowl. Whisk together buttermilk, butter, egg, and vanilla in a small bowl. Stir wet ingredients into dry just until incorporated. Stir in zucchini, chocolate chips, and nuts. Scoop into liners.
3 Bake 20 – 24 minutes or until toothpick inserted in center comes out clean. Cool 5 minutes before removing from pan.
If you don’t tell, no one will know there is zucchini in this cake, not even your veggie hating kids.
1 box German chocolate cake mix (I used a chocolate fudge cake mix)
2 cups shredded zucchini
1 teaspoon cinnamon
1/2 cup buttermilk
1/4 cup vegetable oil
2 eggs
1/2 cup chopped nuts, I used pecans
1/2 cup mini chocolate chips
1 Heat oven to 350, 325 for dark or nonstick pans. Spray bottom of 9 x 13″ pan with cooking spray.
2 Beat cake mix, zucchini, cinnamon, buttermilk, oil, and eggs on low until moistened, then on medium for 2 minutes. Pour into prepared pan. Sprinkle top with nuts and chocolate chips.
3 Bake 30 – 35 minutes or until toothpick inserted in center comes out clean. Let cool before cutting.
It’s the summertime onslaught of zucchini already and I am fighting the good fight! I’ve made Italian Zucchini Boats and Taco Zucchini Boats so this year I decided to try Pizza Zucchini Boats and they were a hit!
1 – 2 (14 oz each) jars pizza sauce
5 – 6 zucchini, depending on size
1 package small pepperoni slices
1 package precooked bacon crumbles
1 – 2 cups shredded Mozzarella cheese
1 Preheat oven to 400.
2 Spread about 1 cup of pizza sauce in bottom of 9 x 13″ pan.
3 Cut ends off zucchini, then cut in half then slice the halves lengthwise. Using a spoon or melon baller, make a trough down the middle of each zucchini piece. Place zucchini pieces in pan, skin side down, trough side up. Place a small spoonful of pizza sauce into each zucchini piece.
4 Sprinkle bacon into each zucchini trough followed by several pieces of pepperoni and then sprinkle with Mozzarella.
5 6 Bake 30 – 40 minutes or until a fork pierces the zucchini easily.
Got a new ice cream maker for free with my Kohls cash. Do you shop there? I love Kohls, mostly because they have a petite department and I can find short pants for my short legs. I have lost a little weight lately so bought some new clothes in a smaller size and ended up with $90 in Kohls cash so I splurged and bought a Cuisinart Ice Cream/Frozen Yogurt/Sorber maker. And of course ice cream was first up.
1 cup whole milk
3/4 cup sugar
pinch salt
2 cups heavy whipping cream (Costco has the best heavy whipping cream)
1 tablespoon vanilla
1 Whisk or beat together milk, sugar, and salt until sugar is dissolved. Stir in heavy cream and vanilla. Cover and refrigerate 1 – 2 hours or overnight.
2 From this point, follow your ice cream makers instructions to make ice cream.
Strawberry and Nutella Stuffed Waffles and yes, they were as delicious as they look!
Classic Waffle Batter
2 cups flour
1 – 2 tablespoons sugar
1 tablespoon baking powder
1/4 teaspoon salt
1 3/4 cups milk
2 eggs
3 tablespoons vegetable oil
Filling for dessert waffles, per waffle
about 2 strawberries, cut into thin slices
about 2 tablespoons of Nutella
whipped cream for topping
1 Whisk together dry waffle ingredients in a large bowl.
2 Whisk together wet waffle ingredients in a medium bowl.
3 Whisk wet ingredients into dry just until incorporated.
4 Preheat waffle maker for 10 minutes.
5 Spread scant 1/3 cup batter into waffle maker. Layer 1 cut up strawberry over batter, top with Nutella, spreading it into a thinner layer then top with another cut up strawberry. Spread another scant 1/3 cup batter over berries/Nutella.
6 Flip waffle maker to other side and cook for about 7 minutes. Top with whipped cream.
Zucchini Season is upon us once again! And the fight against the never ending supply of zucchini is in full swing around here. The zucchini started coming and before I knew it there were like 12 zucchinis sitting in my kitchen already. Now I have to use zucchini and sourdough discard on a weekly basis. Challenge accepted! This bread was good, I really liked the brown sugar flavor of it but it wasn’t as good as my fav, Blue Ribbon Zucchini Bread. Still a good way to use up both zucchini and sourdough discard.
DRY INGREDIENTS
2 cups flour
2 teaspoons baking powder
1/2 teaspoon baking soda
1 teaspoon salt
2 teaspoons cinnamon
1/2 cup chopped walnuts (I left the nuts out this time)
WET INGREDIENTS
1 cup packed light brown sugar
2 eggs
1/2 cup sourdough discard
2 teaspoons vanilla
1/2 cup oil
1 3/4 cups shredded zucchini
1 Preheat oven to 350. Spray 9 x 5″ loaf pan with cooking spray for baking.
2 In a large bowl, whisk together dry ingredients.
3 In a separate medium size bowl, whisk together wet ingredients except for the zucchini.
4 Stir the wet ingredients into the dry ingredients and stir just until combined. Gently stir in zucchini.
5 Pour batter into prepared pan and bake for 55 – 60 minutes or until toothpick inserted in center comes out clean.
6 Let cool for 10 – 15 minutes before turning out of pan.
I got a new waffle maker on Amazon Prime Day to add to my collection, it’s called the Stuffler and, as you might have guessed, it makes stuffed waffles. 2 tablespoons pizza or spaghetti sauce
2 – 4 tablespoons shredded mozzarella cheese
1 – 2 tablespoons precooked bacon
1 Whisk together dry waffle ingredients in a large bowl.
2 Whisk together wet waffle ingredients in a medium bowl.
3 Whisk wet ingredients into dry just until incorporated.
4 Preheat waffle maker for 10 minutes.
5 Spread scant 1/3 cup batter into waffle maker. Layer pizza ingredients over batter, putting sauce between ingredients. Spread another scant 1/3 cup batter over pizza ingredients.
6 Flip waffle maker to other side and cook for about 7 minutes.
