Bountiful Baskets The First!

Anybody out there heard about Bountiful Baskets?  I will give you a little info here but if you want to know more then go to http://www.bountifulbaskets.org for the full story and they also have a Facebook page where you can get some more info.  Bob’s friend Sean (Hi Sean!) told him about it so we decided to check it out.  Here’s how it works (the quick version):  you go on line Monday morning to their website and request your basket and pay your $15 then on Saturday at a specified time (for us it was 6 am) you go to the specified pickup site in your area with something to put all your goodies in such as a couple of reusable shopping bags and pick up your “basket.”  Here’s what we got today for our $15 (it changes every week):

3 tomatoes

3 red pears

6 nectarines

5 bananas

1 pound strawberries

1 big bunch red grapes

3 butternut squash

1 bunch broccoli

7 carrots

1 bunch red chard

1 head iceberg lettuce

You can order other things also such as bread and variety packs (they had a 4th of July pack of watermelon, blueberries and strawberries which now I’m wishing that I ordered! and the other pack I remember was a dip pack with things to make a dip with then things to dip in the dip).  I encourage you to go to their website and read all about it!

Slow Cooker Three Bean Beer Pot

Also for dinner tonight with my sister in law and nieces and nephews, we are having this but I left out the beer so for us it is just 3 bean pot!  This is a Betty Crocker recipe which I got in an email.  Smelled divine as it was cooking today!

8 slices uncooked bacon, cut into small pieces (I just used the whole package)

1 cup chopped onion (about 1 large)

1 cup barbecue sauce

3/4 cup regular or nonalcoholic dark beer (I substituted chicken broth)

1/4 cup packed brown sugar

2 (15 oz each) cans black beans, drained and rinsed

2 (15 oz each) cans pinto beans, drained and rinsed

1 (19 oz) can cannellini beans, drained and rinsed (I used Great Northern beans instead)

1 In 10″ skillet, cook bacon and onion over medium heat 7 – 10 minutes, stirring occasionally, until bacon is crispy then drain.

2  Spray 3 – 4 quart slow cooker with cooking spray.  In cooker, place bacon mixture and remaining ingredients and mix well.

3  Cover and cook on low 4 – 6 hours.  (My crock pot is lava hot so they were done and starting to turn to mush after about 4 hours.)

Yields 16 servings (1/2 cup each), each serving = 270 calories

Creamy Potato Salad Made Over

This is a recipe from Kraft (www.kraftrecipes.com).  Bob loves potato salad but I don’t really like to make it because of the potatoes and cooking them and peeling them and cutting them up, too much work but every now and then I break down and make him potato salad or else he cooks/peels/chops the potatoes for me.  Since he likes it so much and since my sister in law, Laurie and her 4 kids and 1 grand kid are coming over for dinner tonight,  I took the recipe and and multiplied all the salad ingredients by 5 and all the dressing ingredients by 4 so there would be plenty of leftovers.  It made a huge bowl of potato salad!

1 pound red potatoes, unpeeled, cut into chunks

1/4 cup Kraft Light Done Right! Zesty Italian Reduced Fat Dressing

1/3 cup Miracle Whip Light Dressing (I hate Miracle Whip so I used reduced fat mayo)

1 1/2 teaspoons Grey Poupon Dijon Mustard

1 hard cooked egg, chopped

1/2 cup sliced green onions

(I also added about 5 stalks of chopped celery)

1  Cook potatoes in boiling water 15 minutes or until tender then drain.  Rinse potatoes with cold water until cooled and drain again.

2  Mix dressings and mustard in large bowl.  Add potatoes, egg, onions (and celery) and mix lightly.  Cover.

3  Refrigerate at least 30 minutes or up to 24 hours.

Original recipe yields 4 servings, each serving = 150 calories

Chocolate Quickies

This recipe comes from one of my cookbooks called “Death By Chocolate Cookies” by Marcel Desaulniers.  The cookies are so named because they can be made and baked quickly.  They were pretty quick to make and taste yummy!

2 cups flour

1/2 cup unsweetened cocoa powder

1 teaspoon baking powder

1 teaspoon salt

1/2 pound (2 sticks) unsalted butter, cut into 1 ounce pieces

1 cup sugar

3 eggs

1 tablespoon vanilla

2 cups semisweet chocolate chips

1  Preheat oven to 350.

2  Sift flour, cocoa, baking powder and salt onto a piece of wax paper.

3  Beat butter and sugar on medium for 3 minutes until soft.  Scrape down bowl then add eggs and vanilla and beat on medium 2 minutes until smooth.  Scrape down bowl.  With mixer on low, gradually add dry ingredients until incorporated, about 30 seconds.  (I added another 3/4 – 1 cup  flour here because the dough was really sticky.)  Add chocolate chips and mix in by hand.

4  Using cookie scoop, scoop onto baking sheets and slightly flatten each cookie.  (Don’t omit this step, I did with the first batch and they came out in round little balls, unless you like your cookies like that then go ahead and don’t flatten them!)  Bake for 10 – 12 minutes.  Let cool slightly before removing from baking sheets.

Makes about 4 dozen.

Women in Business Logo Luncheon Fondant Cake

My friend Jennifer Harmon who is my Pampered Chef Director and the President of the Women In Business organization asked if Courtney and I would make a cake for the June luncheon which we were happy to do for the practice and it also gave us some exposure to some new people which is great too!  Three of the ladies at the luncheon asked if we could make cakes for them and so we have some more opportunities to practice.  The bottom layer of this cake is the WASC cake recipe with a chocolate cake mix and 1/2 cup cocoa subbed for 1/2 cup of the flour and then the top 2 layers are the original White Almond Sour Cream recipe itself, the frosting is my Vanilla Buttercream and the blue fondant is Duff’s fondant from Michaels and the white fondant is the fondant from Funfinity.  Courtney made their logo out of fondant for the top of the cake and did a great job!  They gave away the top layer of the cake as a door prize and then we ate the other 2 layers at the lunch but I still have lots of cake leftover so if you live near me and have a hankering for cake, just call and I’ll bring some over!  Thanks to Jennifer for the support and thanks to the ladies of the Women in Business group who were so supportive and kind!

Cucumber, Tomato and Feta Salad

Father’s Day dinner – barbecue steak, cheesey ranch potatoes and this salad which comes from the June 2011 issue of Bon Appetit magazine, yum!

6 cups coarsely chopped English hothouse or Persian cucumbers (about 2 pounds total) (I used the mini cucumbers from Costco)

2 large tomatoes (about 1 pound total), coarsely chopped

1 bunch scallions, chopped

1 cup assorted pitted olives (such as Kalamata or Gaeta), halved (left these out)

1  7 oz package feta, crumbled, divided

1/2 cup coarsely chopped fresh mint (didn’t have any)

6 tablespoons extra virgin olive oil

1/4 cup fresh lemon juice

Kosher salt and freshly ground pepper

Combine cucumbers, tomatoes, scallions, olives, half of feta and mint in large bowl.  Whisk oil and lemon juice in small bowl; season dressing with salt and pepper.  Pour dressing over salad and toss to coat.  Season to taste with salt and pepper.  Sprinkle remaining feta over and serve.

Mini Flower Fondant Cake

Last cake of the weekend!  We already have 3 wedding cakes coming up this summer so we bought a new flower making kit because Courtney has some new flowers to learn how to do for some of those cakes.  She wanted to practice so when we were all done with the other cakes we put this one together for her to practice on and then she took it babysitting to the Hansens for Bentley and Meadow and Jenn (Hi Jenn!) to munch on (as you might imagine, we have plenty of cake around here and don’t really need more!).  It was a little vanilla cake with vanilla frosting and vanilla fondant which Courtney said tasted great and she is a chocolate girl like me so that’s high praise!  She did great on the flowers, the lily especially is really pretty.  She’ll be practicing more so that we can be ready for the wedding cakes!

New York Yankees Father’s Day Fondant Cake

Our friend Kimber asked if we would make a New York Yankees Father’s Day cake for her husband Tyler to celebrate his very first Father’s Day.  This was another fun and different cake for us.  We made a vanilla cake (from Ann’s Poppy Seed Cake recipe subbing vanilla for yellow cake and omitting the poppy seeds), vanilla buttercream frosting and vanilla buttercream fondant from Funfinity.  Courtney cut out the Yankees logo and I did the pinstripes but we were out of room for the letters so those had to go on the platter.  We couldn’t quite get the Yankees blue because we didn’t have the right color blue and neither of us wanted to go to Michaels again since we are there almost every day and sometimes twice a day 🙂 but I still think it looks good (but then I’m not a dyed in the wool Yankees fan either).  Happy First Father’s Day Tyler!

Favorite Things Father’s Day Chocolate Fondant Cake

This cake was so much fun to make!  My friend Lori called to see if we would make a Father’s Day cake for her husband Derek.  She sent us a list of things that he likes and we chose what we could do to put on the cake.  He loves black licorice so we used that to line the layers and he loves peanuts but we didn’t want to put actual peanuts on the cake so we used circus peanuts to also line the layers.  He also loves Sour Patch Kids so we used those as our unifying theme on the cake, the Sour Patch Kids are doing all the things that Derek likes to do on his cake.  In the back right corner there is a tent with a SP Kid camping, in the back left corner there is a camera with a SP Kid getting his picture taken, in the front right corner is a skateboard with a SP Kid trying to stay on the skateboard, on the front left there is a bowl of chunky peanut butter with a bar of chocolate dunked in it and a SP Kid trying to climb in and then on the top there is a piano with 2 SP Kids playing chopsticks (at least that’s what they’re playing in my head!).  Derek also loves chocolate so this is a chocolate lover’s dream cake – rich cocoa cake (White Almond Sour Cream Cake recipe with lots of cocoa added), thick chocolate frosting (Vanilla Buttercream frosting recipe also with a lot of cocoa added) and then chocolate fondant from Funfinity here in Orem.  While we were making it, it all smelled so good and Cort and I just wanted to go face first in the cake!  Happy Father’s Day Derek!

Marathon Logos and Birthday Present Fondant Cakes

These cakes were for my friend Dave’s wife Lisa who is an avid marathon runner so he wanted a cake with some of the logos of the marathons that she’s run on it.  It was a good stretch for us to try something new and ultimately it came out pretty good.  Courtney wanted to try her hand at bow making so we made the little present cake, covered it in pink fondant and then Cort made the bow out of a teal fondant and gum paste mixture and we made a gift tag out of white fondant/gum paste and wrote on it with edible food markers.  The logo cake we covered in white fondant and then put a logo on each side and 1 on top.  For those of you who are unfamiliar with marathon logos (like we were), I’ll tell you what they all are.  The “26.2”on the top of the cake is the length of a marathon and the 3 red stripes on the front is the logo for the Red Rocks marathon.

The orange logo there on the side is the logo for the Ragnar marathon.

The logo on the back (or in this photo, on the right) is the logo for the St George marathon which we had to cheat on a bit because we couldn’t do the script that they did in the actual logo on our cake (it was really hard to do in fondant!) and the logo on the left in orange is the logo for the Utah Valley marathon.  It was fun to do something different so thanks Dave for giving us the opportunity!  Lisa loves cherry chip cake so I adapted the White Almond Sour Cream recipe which was using a cherry chip cake mix and adding 1/2 tablespoon of cherry extract to the recipe for flavoring and of course then my vanilla buttercream frosting (when you find something that works and tastes delicious like the White Almond Sour Cream cake recipe and the Vanilla Buttercream Frosting recipe then why not use it?).  Happy Birthday Lisa!
