Also for dinner tonight with my sister in law and nieces and nephews, we are having this but I left out the beer so for us it is just 3 bean pot! This is a Betty Crocker recipe which I got in an email. Smelled divine as it was cooking today!
8 slices uncooked bacon, cut into small pieces (I just used the whole package)
1 cup chopped onion (about 1 large)
1 cup barbecue sauce
3/4 cup regular or nonalcoholic dark beer (I substituted chicken broth)
1/4 cup packed brown sugar
2 (15 oz each) cans black beans, drained and rinsed
2 (15 oz each) cans pinto beans, drained and rinsed
1 (19 oz) can cannellini beans, drained and rinsed (I used Great Northern beans instead)
1 In 10″ skillet, cook bacon and onion over medium heat 7 – 10 minutes, stirring occasionally, until bacon is crispy then drain.
2 Spray 3 – 4 quart slow cooker with cooking spray. In cooker, place bacon mixture and remaining ingredients and mix well.
3 Cover and cook on low 4 – 6 hours. (My crock pot is lava hot so they were done and starting to turn to mush after about 4 hours.)
Yields 16 servings (1/2 cup each), each serving = 270 calories
