Tex – Mex Fried Rice
Apparently you can buy frozen cooked white rice at the grocery store and if that’s true then this would be a legit one pot meal.
1 pound lean ground beef
1 (1 oz) package taco seasoning mix
1/2 cup water
1/4 cup oil
1 onion, chopped
1 red bell pepper, chopped
1 can corn, drained
1 can black beans, drained and rinsed
1/2 teaspoon salt
3 cups cooked white rice
1 can chopped green chiles
1 cup shredded Monterey Jack or cheddar cheese
toppings – avocado, cilantro, green onions, salsa, sour cream, crumbled tortilla chips
1 In a large skillet, cook hamburger, stirring frequently, until no longer pink, about 5 – 7 minutes. Drain and return to skillet. Stir in taco seasoning and water, heat to simmering over medium heat. Cook 1 – 3 minutes, stirring occasionally, until thickened. Remove meat from skillet.
2 Add oil to skillet and heat over medium high heat. Add onion, bell pepper, corn, black beans, and salt. Cook 7 – 10 minutes, stirring frequently, until veggies are tender and beginning to brown at edges.
3 Add rice and green chiles, cook 4 – 6 minutes, stirring frequently, until heated through. Stir in beef and cook 1 – 2 minutes until hot. Remove pan from heat.
4 Sprinkle with cheese. Cover and let stand 1 – 3 minutes or until cheese melts. Top with desired toppings.
