One Pot Pesto Pasta with Chicken and Tomatoes

I swear it was even better the next day right out of the fridge cold and it was pretty amazing the first day!

12 oz (3 1/2 cups) uncooked penne pasta

3 cups chicken broth

1 – 2 cups prepared pesto (I love the Costco Kirtland brand pesto)

2 cups shredded cooked chicken

2 cups halved cherry or grape tomatoes

1/4 cup julienne cut fresh basil

3 tablespoons Parmesan cheese

1  In large saucepan, heat pasta and chicken broth just to boiling over high heat.  Reduce heat to medium, cover and cook 8 – 10 minutes, stirring frequently, until pasta is tender and liquid is almost absorbed.  Remove from heat.  Stir in pesto, chicken and tomatoes.  Cook over medium heat 2 – 3 minutes or until heated through.

2  Garnish with basil and Parmesan.
