And here is the other adorable cake that Cort made while I was gone, a Harry Potter Birthday cake!  I think she did such a good job on this one, the sorting hat is amazing!  It is almost too fun to eat!  I was really sad to miss out on the making of this one.  Happy Birthday to Cort’s friend (sorry that I can’t remember her name) and congrats to Cort on another job well done!

Beehive Gender Reveal Fondant Cake

While I was gone, my daughter Courtney did some cake making/decorating without me which I was sorry to miss out on because both of them looked like fun!  This one was a Reveal the Gender cake for her friend Brie’s baby shower.  I think it came out just darling!  I love the bees flying around the sides.  It’s a girl so the cake inside was a bright pink.  I think that is an adorable way to let everyone know about the baby.  Congrats to Brie and way to go Cort!

You might have noticed that the blog has been quiet for about 5 – 6 weeks and that is because I was in Sicily and then England working on a movie but now I am back and ready to blog!  While I was gone, my blog was invited to be a part of a new website called “Recipes US”  which you can check out here by clicking on this link or by clicking on the link which is now on my blog by scrolling down to the end of the list on the left hand side of the page.  It is a recipe search site and looks like it has access to lots of tasty recipes so check it out and look for me in the section called “Latest Recipe from the Blogosphere”!

“Up” Cake Pops

Our theme for Girls Camp this year is the Disney movie, “Up” and last night we had our camp kickoff so I thought it would be fun to do a bunch of multicolored cake pops to look like all the balloons on the house but how do you display and serve that many cake pops?  I looked around in craft stores here but couldn’t find a single cake pop stand.  I did find some online but they were pretty pricey so I decided to just try and make one on my own so I went to Michaels and just wandered around looking for some inspiration and then I saw these foam rounds and thought AH HA!  So I bought 4, I think they are 6″, 8″, 10″ and 12″.  I wrapped the edges of each with a brightly colored ribbon which I pinned on into the foam and then I lined them all up and stuck a couple of bamboo skewers down through the top layer to the bottom layer. After I made all my pops (click here for the instructions on how to make cake pops), I went around each edge and stuck the pops in and voila!  Homemade cake pop stand!  I was pretty proud of myself!

PS  I made around 70 or so cake pops and the girls ate all but about 7 of them so I’d say they were a hit!  But then who doesn’t love a good cake pop?

Spinach Artichoke Pasta

Spinach Artichoke Pasta

Delicious dinner last night courtesy of “The Pioneer Woman”, Ree Drummond.  I’m leaving Sunday for 5 weeks so I thought I’d better get in some cooking for the boys (that would be my husband Bob and son Zach) before I leave.  I’m going to Sicily and London for work so no cooking or baking for 5 weeks but lots of eating I’m sure, maybe I’ll be able to share some of it with you when I get back.

6 tablespoons butter

4 cloves garlic, finely minced (I used 2, they were pretty big)

2 bags baby spinach (I just used 1)

2 cans artichoke hearts, drained and halved

3 tablespoons flour

3 cups whole milk (I only had 1%)

1/4 teaspoon cayenne pepper (left this out)

salt and pepper, to taste

1/2 cup grated Parmesan cheese

1 1/2 cups Mozzarella or Monterey Jack cheese, grated (I used Mozzarella)

1/2 cup low sodium chicken broth (less or more) (I didn’t need this as my sauce was not too thick, perhaps it was the 1% milk)

12 ounces Penne, cooked until al dente (I used a 16 oz box)

1/2 cup seasoned Panko breadcrumbs

crushed red pepper, to taste (again, left this out)

1  Melt 2 tablespoons butter in large pot or skillet.  Add garlic and throw in spinach.  Stir it around until it’s wilted, about 1 minute.  Remove spinach from pot and set aside.

2  Add 2 more tablespoons butter to same pot and raise heat to high.  Throw in halved artichokes and stir it around until they get a little color, 1 – 2 minutes.  Remove artichokes from pot and set aside.

3  Reduce heat to low.  Add 2 more tablespoons butter to pot.  When melted, sprinkle in flour and whisk until it’s combined.  Pour in milk and whisk to combine.  Let cook for 3 – 4 minutes or until starting to thicken.  Add Parmesan, Mozzarella or Monterey Jack, salt and pepper and cayenne pepper.  Stir to melt, if it’s overly thick, splash in chicken broth.

4  Add artichokes and pasta, tossing gently to combine.  Gently fold in spinach, then pour pasta into serving bowl.  Sprinkle top with red pepper flakes and plenty of breadcrumbs for crunch.

Friday was Courtney’s 21st birthday and I wanted to make her something fun!  She and Jaren came over last night for a birthday dinner so I spent some time on Saturday making this birthday treat for her.  The idea came from the book “What’s New, Cupcake?” by Karen Tack and Alan Richardson.  I made all the cupcakes butter pecan as that is Courtney’s new favorite flavor.  I love making stuff like this!  The instructions are pretty long so if you want to make this, check out their book, it’s totally worth buying!  Happy Birthday Courtney, I love you!

It’s my friend Gina’s birthday tomorrow so I used half of the cupcakes for the basketball cupcakes and then the other half to make this flower for Gina for her bday!  I just rolled them all in decorating sugar – 1 in pink for the center, 6 in yellow for the petals and then 6 more in green for the stem.  I added some Sugar Pearls to the center of the pink one.  I think it looks really cute and couldn’t have been any easier, plus it reminds me (and hopefully Gina too) that Spring is coming!  (It snowed here today after being like 70 last week, welcome to Utah!)  Happy Birthday my dear friend Gina!

Basketball Cupcakes/Perfect Cupcake Recipe (using a mix)

The young women at church were competing this morning in the semifinals of their basketball tournament so I decided they deserved some basketball cupcakes because they are winners whether they win or lose!   (They lost, bummer.)  The cupcake recipe comes from a blog called “Tidy Mom”.  I haven’t tasted one of these yet since I gave them all away but she claims that they are the perfect cupcake, I’ll let you know when I get to try one before giving them all away.  The basketball design was my own creation so I’ll explain that at the bottom.  I made yellow cupcakes with her recipe and then dumped in a bag of peanut butter and milk chocolate chips.  They smelled divine!

1 box cake mix, any flavor

3 eggs

1/2 cup butter, melted (no margarine, butter only!)

1 cup water

1  Melt butter in microwave.

2  Add cake mix, eggs and water to butter in large bowl.

3  Mix on low for 1 minute then on medium/high for 1 minute.

4  Fill cupcake liners and bake at 350 for 20 minutes.

For basketball cupcakes, you will need:

frosting, your choice (I used my favorite vanilla buttercream)

orange sprinkles or decorating sugar

black licorice strings

Frost a cupcake with a thin layer of frosting then cover with orange sugar (I’ve found the easiest way to do this is to dump the sugar in a bowl and then dip the top of the cupcake in there and gently roll it around until it is covered).  Cut a licorice whip into small strips and form basketball design as shown above, pressing ends of strands gently into frosting.

So we had a lot of food leftover from the wedding luncheon and reception too so I boiled up a box of pasta and then just started adding whatever was in the fridge to it and it came out pretty good!  I only got one bowl as Bob and Zach ate all the rest so it must have been tasty.  I wasn’t too careful about keeping track of what I did so I’ll try to recreate here, it’ll be close.

juice of 1 lemon

1/2 cup olive oil

4 tablespoons white wine vinegar

1 (16 oz) box your choice of pasta (I used tri-color rotini)

about 2 cups broccoli florets

about 1 cup sugar snap peas

about 1 cup cherry/grape tomatoes, cut in half lengthwise

1  Whisk together lemon juice, olive oil and vinegar in small bowl.

2  Boil pasta according to package directions.  During the last 2 – 3 minutes of boiling time add broccoli and peas (or whatever veggies happen to be in your fridge).

3  Drain pasta/veggies.  Carefully stir in tomatoes then toss with dressing.

Can be served hot or cold.

Courtney’s Grey and Yellow Fondant Wedding Cake with Hello Kitty Topper

It’s been a wild and wonderful week!  My daughter Courtney got married on Tuesday and then we had a reception for her and her husband Jaren on Wednesday.  Courtney and I made her wedding cake on Sunday.  Many thanks to Derek White for this lovely picture of her cake at the reception!  I wish I could have him photograph all of my food for my blog!  Someday when I have the time, I hope to become a better food photographer!  The cake is chocolate (made from the “White Almond Sour Cream” cake recipe which you can find on my blog by clicking here).  The fondant came from a local place here called “Goodies” which the lady custom colored for us.  We were a little nervous about trying to color the fondant grey as that is a hard color to make look good on a cake.  We ordered the Hello Kitty topper from Amazon and the broach that is pinned to the ribbon is my grandma’s!  It was a great cake for a great day!  Congrats to my beautiful daughter Courtney and my handsome new son Jaren!  Love you guys!
