All of the sudden, I’ve got zucchini galore so I spent the last couple days making loaves of zucchini bread in various flavors but all with a cake mix to speed things up a bit.
I made Double Chocolate Zucchini Bread and Easy Cake Mix Zucchini Bread (to which I added 1 cup of Trader Joe’s Caramel Sea Salt Baking Chips) and now this one here. All delicious!
1 box lemon cake mix
1/2 cup oil
3 eggs
2 cups grated zucchini
zest and juice of 1 lemon
1 cup white chocolate chips
1 Preheat oven to 350. Spray to loaf pans with cooking spray for baking.
2 In a mixer bowl on low, beat together cake mix, oil, eggs, zucchini and lemon zest and juice until combined. Stir in white chocolate chips by hand.
3 Divide evenly between the pans. Bake for 30 minutes or until toothpick inserted in center comes out clean.
4 Let bread cool in pans for 10 – 15 minutes before turning them out to cool completely.
