
This was a winner! All the thumbs up! Tasted delicious and it was cooked in the microwave so no turning on the oven and heating up the house.
2 – 3 lemons, depending on how lemony you want it
12 oz uncooked thin spaghetti noodles
2 (14.5 oz each) cans chicken broth
1 cup grape tomatoes, cut in half
3 garlic cloves, peeled
1 – 2 oz grated/shredded Parmesan cheese
3 tablespoons olive oil
1/2 teaspoon pepper
2 cups diced cooked chicken breasts
1 – 2 cup small broccoli florets
1 zucchini, thinly sliced (I added this in because, you know, zucchini everywhere!)
1 Zest and juice lemons to measure 1 tablespoon zest and 1/4 cup juice or more of each if you like it really lemony.
2 Break noodles in half. Add noddles, broth, and lemon juice to a large microwave safe baking dish with lid.
3 Microwave, covered, on high 11 – 13 minutes, stirring halfway through cooking time, until most of the liquid is absorbed.
4 Remove baking dish from microwave and stir in garlic, Parmesan, lemon zest, oil, and pepper. Stir in tomatoes, chicken, broccoli, and zucchini.
5 Microwave 2 – 3 minutes or until veggies are crisp – tender.
