
This was a good chili recipe, I didn’t love it but the boys in my house did, probably because of all the meat!
1/4 cup olive oil, divided
1 pound beef stew meat
1 onion, diced
4 cloves garlic, minced
1 pound ground beef
1 tablespoon cumin
1/2 tablespoon chili powder
1 tablespoon onion powder
3 tablespoons tomato paste
2 plum tomatoes, diced
1 (28 oz) can diced tomatoes
2 tablespoons beef base
1 1/2 cups water
1 (14.5 oz) can pinto beans, drained and rinsed
1 Heat 2 tablespoon olive oil in Dutch Oven over medium heat. Add stew meat and saute until meat is browned on all sides. Remove meat and set aside.
2 Add remaining 2 tablespoons olive oil to pot. Add onions and saute until soft. Add garlic and saute until garlic is fragrant. Add ground beef and cook until beef is no longer pink. Drain excess fat.
3 Return stew meat to pot. Add cumin, chili powder, onion powder, tomato paste, diced tomatoes, can of diced tomatoes, beef base, and water. Bring to a simmer, cover, and simmer over low heat for 3 hours or until stew meat is tender. Add pinto beans and simmer for 10 minutes.
