Easy Mexican Chicken and Beans

This was a really quick and easy one pot dinner. You could serve it as is or wrap it in tortillas or make a salad out of it, whatever your family likes.

1 pound uncooked chicken breast strips for stir fry

1 package (1 oz) taco seasoning mix

1 (15 oz) can black beans, drained and rinsed

1 (11 oz) can corn, undrained

1/4 cup water

1 Spray 10″ skillet with cooking spray. Add chicken and cook over medium high heat for 8 – 10 minutes, stirring occasionally, until no longer pink in center,

2 Stir in seasoning mix, beans, corn, and water. Cook 8 – 10 minutes, stirring frequently, until sauce is slightly thickened.
