
We have so much snow here in Utah so I am cooking and baking a lot because A – I’m bored and B – it warms up the kitchen and the rest of the house and C – because I just love it so much. I do not however love the snow. I’m ready for this winter to be over. It’s been a crazy one. This soup is not crazy but delicious especially on a chilly day.
2 tablespoons olive oil
1 pound ground turkey, I think sausage would be delicious too
1 teaspoon seasoning salt
1/4 teaspoon black pepper
1/2 cup thinly sliced carrots
1/2 cup chopped celery
1/2 cup chopped onion
1 tablespoon minced garlic
32 oz (4 cups) chicken stock
28 oz tomato sauce
2 cups finely chopped fresh tomatoes
1 teaspoon Worcestershire sauce
1 dried bay leaf
1/2 teaspoon oregano
1 cup cooked elbow macaroni noodles
1 Heat oil in large soup pot over medium heat. Add turkey, salt, and pepper. Cook, crumbling turkey into small pieces, about 5 minutes or until golden brown. Add carrots, celery, onions, and garlic. Cook until onions are translucent, about 3 minutes.
2 Stir in chicken stock, tomato sauce, diced tomatoes, Worcestershire, bay leaf, and oregano. Simmer, covered, for 30 minutes.
3 Add noodles right before serving.
