
This was another yummy dinner. The recipe is for an Asian Noodle Salad but I wanted to make it a warm noodle dish, so I changed the recipe up a bit. You can find the original recipe through the link at the bottom of the post.
1 pound dry spaghetti
1 tablespoon canola oil
1 teaspoon ground ginger
2 cloves garlic, minced
1/4 cup sugar
3/4 cup soy sauce
1/4 cup water
1/4 cup apple cider vinegar
2 tablespoons sesame oil, divided
2 cup broccoli florets
1 cup snow peas
1 cup matchstick carrots
1/4 cup green onions, chopped
1 tablespoon black sesame seeds
1 Cook spaghetti noodles according to package directions.
2 Heat oil in large skillet over medium heat. Add garlic and stir until fragrant, about 30 seconds. Add ginger, sugar, soy sauce, water, and apple cider vinegar stirring until sugar melts and mixture simmers.
3 Add broccoli, snow peas, and carrots and cook for a few minutes then add cooked and drained noodles to sauce in pan and toss with tongs to coat noodles with sauce. Add remaining tablespoon of sesame oil.
4 Garnish with green onions and black sesame seeds before serving.
