This was really good. The recipe came with a cream cheese frosting which I’ve included but I decided to use a streusel topping instead, recipe here and also included in the recipe.
1 cup flour
1 1/2 cups sugar
3/4 cup cocoa
1 teaspoon baking soda
1 teaspoon salt
1 cup sourdough starter
1/2 cup sour cream
1 cup canola oil
1/2 cup coffee or water
1 teaspoon vanilla
1/2 cup mini chocolate chips
1/3 cup packed brown sugar
1/3 cup chopped pecans or walnuts
CREAM CHEESE FROSTING
2 cups powdered sugar
1/4 cup cocoa powder
8 oz cream cheese, softened
4 tablespoons butter, softened
1/2 cup chopped pecans or walnuts
1 For the cake, preheat oven to 350. Spray 9 x 13″ pan with cooking spray.
2 In your mixer bowl, combine flour, sugar, cocoa, baking soda, and salt and mix to combine.
3 Add starter, eggs, sour cream, oil, coffee or water, and vanilla and beat on medium for 3 minutes until well combined.
4 Pour batter into prepared pan.
5 For the streusel topping, mix together the chocolate chips, brown sugar, and nuts and sprinkle over the cake before baking.
6 Bake for about 30 minutes or until toothpick inserted in center comes out clean.
7 Let cake cool completely.
8 For the cream cheese frosting, whisk together the powdered sugar and cocoa. Beat cream cheese and butter until well combined the gradually add the cocoa mixture until well combined. Frost cake and sprinkle with nuts.
