
Black Bean Chili
Trying out different recipes for the weekly pot of soup, decided to do a chili this week and since everyone here loves black beans, this was a good choice, thick and hearty, perfect for winter.
2 onions, chopped, about 2 cups
1/2 cup chopped celery
1/2 cup chopped carrots
1/2 cup chopped red bell pepper
3 (15 oz each) cans black beans, drained and rinsed
1 (14.5 oz) can chicken broth
1 (14.5 oz) can diced tomatoes with liquid
2 tablespoons pressed or chopped garlic
2 tablespoons honey
1 (7 oz) can tomato paste
4 teaspoons chili powder
1 teaspoon cumin
1/2 teaspoon oregano
1 teaspoon salt
1/2 teaspoon pepper
Combine all ingredients in crock pot and cook on high for 5 – 6 hours.
