Chinese Chicken Salad

This is a yummy way to get a lot of veggies into your family!

SALAD

3 cups lettuce, shredded

2 cups red cabbage, shredded

1 cup carrots, shredded (you can buy a bag of already shredded carrots at the store)

1/2 cup green onions, chopped

2 cups chicken, shredded (I used a can of Costco chicken, just drain it and break it up with a fork)

DRESSING

3 teaspoons grated ginger (you can use ground ginger, about 1 teaspoon)

3 minced garlic cloves

3 tablespoons soy sauce

3 tablespoons rice vinegar

1 tablespoon sesame oil

1 tablespoon vegetable oil

1 1/2 teaspoons sugar

TOPPINGS

sesame seeds

1 cup slivered almonds

1 Add salad ingredients to a large bowl and toss to combine.

2 Combine all dressing ingredients and mix well.

3 Start by adding half the dressing to the salad, toss to combine, then taste and add more dressing if needed.

4 Top with sesame seeds and almonds.
