Cornbread Boats

These made for a fun little dinner. I just filled them with canned chili but they were really yummy. Here are the Pampered Chef products that I used to make these little gems –

the Pampered Chef Brownie Pan and

and the Brownie Pan Boat Press. You can see they have a boat press for the muffin pan and the mini loaf pan as well. I used to sell Pampered Chef so I have a lot of their products and I absolutely love them! Here’s the recipe for the Cornbread Boats which happens to be a Pampered Chef recipe as well.

1 egg

1 cup milk

3/4 cup sugar

1/4 cup vegetable oil

1/4 cup butter, melted

1 cup flour

1 cup cornmeal

1 tablespoon baking powder

1/4 teaspoon salt

1 Heat oven to 400. Spray brownie pan with cooking spray.

2 Stir together egg, milk, sugar, oil, and melted butter until combined. Add flour, cornmeal, baking powder, and salt and stir until combined.

3 Place 1 large scoop of batter into each square. Bake 18 – 20 minutes or until toothpick comes out clean.

4 Remove from oven and use boat press to make a well in each square of corn bread. Fill with your choice of fillings such as chili or shredded chicken or pork.
