I made these for my neighbor Micah for his birthday who is off sugar (is that even possible?). I tried one and they were pretty good, for around 100 calories each.
1 cup oats
1 cup almonds, finely chopped
1/4 cup cocoa powder
1/4 cup flax seed, ground (I used chia seeds, I didn’t have any flax seeds)
1/4 teaspoon salt
1 cup peanut butter
1/4 cup honey
1/2 teaspoon vanilla
1 Combine oats, almonds, cocoa, seeds, and salt in a large bowl.
2 Microwave peanut butter and honey until the mixture is creamy and more runny. Add vanilla and stir.
3 Add peanut butter mixture to oat mixture and stir to combine.
4 Roll into balls by using a small cookie scoop to scoop out the mixture then roll into tight balls Store in fridge.
