Sourdough Chocolate Chip Banana Bread

Another great recipe for using up both your sourdough discard and your overripe bananas. It was yummy!

2 cups flour

1/2 teaspoon baking soda

1/2 teaspoon salt

1/2 cup oil

1/2 cup brown sugar

2 eggs

3/4 cup sourdough discard

3 very ripe bananas, mashed

1 teaspoon vanilla

1 cup chocolate chips

1 Preheat oven to 350. Spray loaf pan with cooking spray for baking.

2 Whisk together flour, baking soda, and salt in a medium bowl.

3 In your mixer bowl, beat together oil and sugar and until well combined. Add in eggs, discard, bananas, and vanilla and mix well. Gradually beat in flour. Stir in chocolate chips by hand. Sprinkle some chocolate chips over the top of the loaf.

4 Pour batter into prepared pan. Bake for 55 minutes or until toothpick inserted in center comes out clean. Let cool in pan 10 – 15 minutes before removing.

    I’ve been shying awaying from putting chocolate chips in my banana bread. Someone told me fruit and chocolate don’t go together in a cake. It’s time to break the rules.
