Of all the little food items that I made for Camp Wrap Up, I think these were my favorite. I’d like to make them again but maybe in a regular size muffin and have them for dinner. They were delicious! These are from a blog called Lick the Bowl Good.
3/4 cup flour
3/4 teaspoon baking powder
1 tablespoon Italian seasoning
pinch of salt
pinch of red pepper flakes (left this out)
3/4 cup milk
1 egg, lightly beaten
1 cup shredded mozzarella cheese
1/4 cup grated Parmesan cheese
1 cup cubed pepperoni
1/2 cup store bought pizza sauce
1 Preheat oven to 375. Grease a 24 cup mini muffin pan. In a large bowl, whisk together flour, baking powder, Italian seasoning, salt and red pepper; whisk in milk and egg. Stir in cheeses and pepperoni; let stand for 10 minutes.
2 Stir batter and divide among mini muffin cups. Bake until puffed and golden, about 20 – 25 minutes.
3 Meanwhile, microwave pizza sauce until warm. Serve puffs with sauce for dipping.
