Chocolate Chip Pumpkin Bread

I found this recipe on  Nobody at my house likes pumpkin so I’ve never made pumpkin bread or pie or anything before but felt like giving it a try this year.  It smelled really good baking but no one here will eat it so I’ll have to give it away!  (Perhaps a little gift for two certain ladies that I visit every month?)

3 cups sugar

1 (15 oz) can pumpkin puree

1 cup oil

2/3 cup water

4 eggs

3 1/2 cups flour

1 tablespoon cinnamon

1 tablespoon nutmeg

2 teaspoons baking soda

1 1/2 teaspoons salt

1 cup miniature chocolate chips (I used regular size and added 2 cups because 1 didn’t look like enough)

1/2 cup chopped walnuts (optional)

1  Preheat oven to 350.  Grease and flour three 1 pound size coffee cans or three 9 x 5″ loaf pans.

2  In a large bowl, combine sugar, pumpkin, oil, water and eggs.  Beat until smooth.  Blend in flour, cinnamon, nutmeg, baking soda and salt.  Fold in chocolate chips and nuts.  Fill cans/pans 1/2 – 3/4 full.

3  Bake for 1 hour, or until an inserted knife comes out clean.  Cool on wire racks before removing from cans or pans.
