Monkey Mini Fondant Birthday Cake

And here is another birthday cake for Grant with a monkey on it to go along with his zoo animal party theme!  It’s a 6″ square Triple Chocolate Bliss cake (recipe on blog) with Vanilla Buttercream Frosting and then Duff’s Green Buttercream Fondant on top.  Courtney sculpted the monkey out of chocolate fondant and he is adorable!  I love his little party hat and his banana!  Happy 1st Birthday little Grant!

Hippo Mini Fondant Birthday Cake

My friend Tesla’s little boy Grant is turning 1 and she was having a zoo animal themed birthday party for him so I asked her if Courtney and I could make a cake for him and she said yes.  We actually ended up making 2 because we wanted to practice making zoo animals so here is cake #1 with a hippo.  The cake is a 6″ round Triple Chocolate Bliss cake (already on blog) with Vanilla Buttercream Frosting and then the chocolate fondant from Funfinity.  Cort sculpted the hippo out of fondant and did a fantastic job!  He looks awesome!  I love his little party hat!  Happy 1st Birthday Grant!

Free box of Fiber One Cereal!

I think I’ve mentioned before that I’m signed up on all kinds of websites for recipes, coupons, samples, etc.  This morning I received a full size box of General Mills Fiber One 80 Calorie Honey Squares cereal to sample plus a stack of $1 off coupons, for free!  It came from the website pssst.generalmills.com so go sign up so you can get samples and coupons too!  I opened the box to sample it and it is very tasty, sweet but not too sweet, definitely doesn’t taste like a fiber cereal.  Free is great!  🙂

Squash and White Bean Soup

The 3 butternut squash that we got in last week’s Bountiful Basket have been sitting on the counter staring at me for a week now so I went online today and googled “butternut squash recipes” and found this one at http://www.marthastewart.com and it sounded like one that my family would like so I gave it a try.  It smelled great cooking and Zach just had a bowl and said it was good and that he liked the squash so I guess it’s a keeper.

2 tablespoons olive oil

1 celery stalk, stings removed, cut into 1/2″ pieces (about 1/2 cup)

1 medium onion, diced (about 1 cup)  (I didn’t have any onions so I used about 4 tablespoons of dried onion)

1 garlic clove, minced or pressed

1 1/2 pounds (about 2 cups) butternut squash, peeled and seeded, flesh cut into 3/4″ pieces (I used all 3 of my squash which seemed about right)

1 cup canned diced tomatoes, drained (I used a whole can and reserved the liquid to add back in when I added the broth)

4 cups low sodium canned beef or chicken broth (I used beef and ended up using 3 cans) (or vegetable broth for vegan)

1 cup canned great Northern white beans, drained and rinsed (I used the whole can)

1  Heat oil in medium pot over medium heat until hot but not smoking.  Add celery and cook, stirring, 2 minutes.  Add onion and garlic and cook, stirring occasionally, until softened, about 5 – 7 minutes.  Stir in squash and tomatoes, cook until liquid has evaporated, about 5 minutes.  Add broth and bring to a boil.  Reduce heat to medium low and simmer until squash is tender, about 18 – 20 minutes.

2  Add beans to pot and cook until they are warmed through, about 2 – 4 minutes.  Season with salt and pepper and sprinkle with Parmesan cheese before serving if desired.

Sunflower Garden Fondant Birthday Cake

My good friend Tonianne is turning 50 and her husband John threw her a surprise birthday party and asked if we would make a cake for the party.  The party invitations had daisies on them and Tonianne loves sunflowers so John asked if we would make a cake with those flowers on it.  She loves to garden so we thought we’d make the cake look like a garden box with a green fondant covered layer on the bottom surrounded by a picket fence and then flowers on the top layers.  He had invited a lot of people to the party so we made the biggest cake that we were comfortable with which was this 4 layer square cake with 12″, 10″, 8″ and 6″ layers.  (We have to make several wedding cakes this summer and this is the size and shape they want so we also thought it would be a good chance to practice.)  Tonianne wanted white cake so the top 3 layers are white sour cream cake (see White Almond Sour Cream cake recipe) and the bottom layer is chocolate sour cream (same recipe) with vanilla buttercream frosting.  The green fondant on the bottom layer is Duff’s buttercream fondant from Michael’s and the white fondant is the buttercream from Funfinity.  The picket fence and the “50” are half fondant/half gum paste and the 50 is covered in edible glitter.  We were going to make all the flowers out of fondant but decided that real flowers would be more special for Tonianne’s cake so we bought these daisies and sunflowers at “Planted Earth”, a really cute little store near our house.  Courtney and I were really pleased with the final product and Tonianne loved it!  Happy Birthday Tonianne!  We love you!

Bountiful Baskets #2

Here is our Bountiful Basket week #2!  For $15 we got the following:

7 bananas

3 red pears

7 plums

9 apricots

1 pineapple

a pack of figs (about 7)

4 tomatoes

1 bunch spinach

2 heads broccoli

1 head iceberg lettuce

1 head cauliflower

1 pack  (8 oz) mushrooms

And for an additional $10 we added 5 loaves of 9 Grain Apple Valley Natural Whole Grain Bread.  Haven’t tried it yet but it looks and smells delicious and only has 50 calories a slice.
