So we had a lot of food leftover from the wedding luncheon and reception too so I boiled up a box of pasta and then just started adding whatever was in the fridge to it and it came out pretty good! I only got one bowl as Bob and Zach ate all the rest so it must have been tasty. I wasn’t too careful about keeping track of what I did so I’ll try to recreate here, it’ll be close.
juice of 1 lemon
1/2 cup olive oil
4 tablespoons white wine vinegar
1 (16 oz) box your choice of pasta (I used tri-color rotini)
about 2 cups broccoli florets
about 1 cup sugar snap peas
about 1 cup cherry/grape tomatoes, cut in half lengthwise
1 Whisk together lemon juice, olive oil and vinegar in small bowl.
2 Boil pasta according to package directions. During the last 2 – 3 minutes of boiling time add broccoli and peas (or whatever veggies happen to be in your fridge).
3 Drain pasta/veggies. Carefully stir in tomatoes then toss with dressing.
Can be served hot or cold.
