To be honest, I wasn’t sure about this one but my boys like all these ingredients so I decided to give it a go and it was delicious and also very easy to make.
2 tablespoons olive oil
1 onion, thinly sliced
2 garlic cloves, minced
1 (5 oz) package mini pepperoni or regular size, chopped
1/4 – 1/2 cup jarred pizza or marinara sauce
3 cups cooked white rice
1 (8 oz) can pineapple chunks, drained
1 cup mozzarella pearls or cubed mozzarella
1/4 cup fresh basil leaves
1 In a large skillet, heat olive oil over medium high heat. Add onion, garlic, and pepperoni. Stir and cook until onion is softened and pepperoni is starting to sizzle, about 3 minutes.
2 Add sauce and stir until everything is coated. Add rice and cook, stirring constantly, until rice is sizzling and hot, about 2 – 3 minutes.
3 Add pineapple chunks and stir. Add mozzarella and stir. Garnish with basil leaves.
