And here is Pepper Geek’s recipe for pickles jalapenos which I also really liked, easy and multiple jars at a time.
2 cups white vinegar
1 cup water
1 tablespoon kosher or sea salt
1 tablespoon sugar
1 teaspoon dried oregano
1 clove garlic, crushed
10 – 12 jalapenos, sliced into thin rounds
1 Pack sliced jalapeno rounds into jars, leaving about 1/2″ head space.
2 In a medium pot, combine vinegar, water, salt, sugar, oregano, and garlic and bring to a boil.
3 Remove from heat once it boils and pour into prepared jars.
4 Cover with lids and allow to cool for 1 hour before putting in fridge.
(Good for 1 – 2 months)
